Granola Cup with Yogurt & Fruit

Make breakfast or snack time fun and healthy with our Granola Cup with Yogurt & Fruit. Kids love to help prepare these grab 'n go treats, baked in a muffin tin and topped with your favorite yogurt and fruit.

INGREDIENTS

  • 2 cups old-fashioned rolled oats (not instant)
  • ½ cup wheat germ
  • ¼ cup dry roasted sunflower kernels
  • ¼ cup flaked coconut
  • 2 tablespoons flaxseeds
  • ¼ cup butter
  • ¼ cup dark brown sugar, packed
  • 2 tablespoon honey or maple syrup
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon vanilla
  • 1 cup fat-free or low-fat yogurt
  • 1 ½ cup chopped fresh fruit, berries

INSTRUCTIONS

  1. In a large bowl combine first five ingredients. In small saucepan combine butter, brown sugar, honey and cinnamon. Cook and stir over med heat until sugar is dissolved. Remove from heat and stir in vanilla. Pour mixture over oat mixture; stir to coat. Cover and chill until cool.
  2. Preheat oven to 325°. Lightly grease 12-cup muffin tin. Using moist hands, press oat mixture onto bottoms and up sides of muffin cups. Bake 15 minutes or until edges are light brown. If centers puff during baking, re-press with the back of a small spoon. Cool in muffin tin. Loosen and remove cups. To serve, spoon yogurt into granola cups and top with fruit.

For Chocolate Flavored Yogurt

Combine 3 oz. (approx. ⅓ cup) plain fat-free yogurt with 1 ½ teaspoon honey and ¾ teaspoon unsweetened cocoa powder

Makes 12 muffin-sized servings

Note: your favorite flavored Greek fat-free or low-fat yogurt may be substituted. Our dietitians recommend no more than 10g sugar per serving.
